Avocados – The Green Super Fruit

For a long time, my love of avocados was limited to a serving of guacamole…usually served with tortilla chips!  What I didn’t realize, and you may not either, is that avocados are jam-packed with essential nutrients, and can be enjoyed in a wide variety of ways including blended into smoothies and baked into desserts!

Yes, it’s true, this green super fruit can pretty much do it all.

Benefits of Avocado
Avocados are quickly becoming one of the top “super foods” for promoting good health.  They are rich in monounsaturated fats, which are more commonly known as “good fats.” Monounsaturated fats have been shown to reverse insulin resistance and regulate blood sugar levels.  Avocados and avocado oil are some of the richest sources of monounsaturated fats in the world!

They also contain other important nutrients such as carotenoids, fat soluble vitamin A, E and K, water soluble vitamin B and C, trace minerals such as potassium, magnesium, iron and copper, and have a high amount of antioxidant phytochemicals and phytonutrients!

Given the nutrient density of avocados, it’s no wonder the benefits of this super fruit include better heart and digestive health; healthy skin, hair and eyes; cancer prevention and weight loss, among others.

If you haven’t given avocados a chance yet, here are a few good reasons to add them to your regular diet.

1 ½ cups dairy free milk (almond, coconut, cashew milk are all good options)

1 cup spinach

1 banana

2 tablespoons almond butter

2 tablespoons unsweetened cocoa powder or raw cacao

Ice (optional)

Combine all ingredients in blender. Blend until smooth.  Enjoy!
